The Saó Blanc in the glass is pale yellow with green reflexes. It brings aromas of white fruits and field flowers with tropical hints and subtle yeast and wood notes. It is extremely consistent and elegant on the palate, where he shows himself as a characterful, intense and rich wine with a smoky and fruity dominance and excellent final balance.
The Saó Blanc is a potent and strong white wine, spicy in minerality, healthy and crisp in the acidity. He is predestined as a companion of fine dishes with fish, vegetables and light meat as well as rich rice dishes, which explains his appearance on wine maps of well -known restaurants such as Celler de Can Roca in Girona (3 stars Michelin) and Restaurante Boscana in Lleida (1 star Michelin).
It almost borders a miracle how the Blanch I Jové family conjures up fresh, aromatic white wines in their hot dry climate. This is due to the soil that stores the moisture well over the year. However, this is also due to the correct sustainable care of the vines in the vineyard and the careful vinification in the basement, which is practiced from the start. In Catalan, “Saó” denotes the natural harmony and the balance that can be found in this company.
The grapes for the Saó Blanc grow in the vineyards "Senill" and "Llinars" all in the nearby area of the cellar in La Pobla de Cérvoles. The vines, which are 40 years old, grow in wire frames in the stony floor made of limestone and clay. The vineyards at a height of 700 meters are based on both southeast and north and are both organic certified.
The weather in summer 2022 was extremely hot and dry with precipitation of 282 mm, which together with a wild boar plague caused a loss of 40% of the harvest.
But thanks to the height of the vineyards and the strong cooling at night, it was possible to get the freshness of the remaining grapes. Macabeu and Garnatxa Blanca vines are resistant and in autumn they were ideal and reliable suppliers of first -class healthy grapes at the time of the harvest.
The grapes were harvested by hand in October, unlapped in the basement (separated from the stems and leaves), ground and macerated for approx. 8 hours to extract flavorings. Then they were pressed in a pneumatic press and filled in oak barrels of the first and second occupancy for fermentation. Both grape varieties were fermented separately with their own yeast and matured onto the fine yeast in new oak barrels from French oak. To better extract aromas by autolysis (decomposition) of the yeast, it was regularly stirred in the barrel ("Battonage"). Only then were the wines cleared by the sediment, the cuvée of 80% Macabeu and 20% Garnatxa Blanc made and filled.
